These little puppies are not the picture of health, let’s be honest. But they are damn fine. I have tried substituting in other ‘healthier sugars’ on this one, but if you want a gorgeous texture in the mouth, then icing sugar is the way to go. Clearly, go ahead and tweak as you please though and keep me posted of your progress by taking a snap and tagging us in @thebroadplace

Mix 3/4 cup icing sugar with 1 cup soft organic butter and whip until creamy. Then with a spatula mix in 2 cups wholemeal organic flour, 2 tablespoons of loose Earl Grey tea leaves – the most delightful you can find – with 1/2 teaspoon sea salt and 1 teaspoon of vanilla bean powder.

Get your hands in and mix this into a dough, not over mixing and roll into a log shape using waxed paper/baking paper. Then pop into the freezer for 20 mins to harden so you can easily cut into perfect little rounds. Regarding size, whatever you think looks good. I’ve taken a photo of my holding one of these petite sables so you can check the size, but you can do whatever pleases.

Bake in the oven for 10 – 20 minutes depending on a variation of size, the weather, you know baking goes. Just keep checking on them. They should brown slightly and be rather soft, as when you transfer them straight from the oven to a baking rack, they will firm up there. These are so delightful anytime of day. I mean seriously, any time of day is a good time of day for a fragrant shortbread biscuit that crumbles in the mouth.
