Recipe – Gluten Free Healthy Bounty Bars

This is a dead simple little recipe to whip up that ensures any sweet tooth will be satisfied. Like with all the recipes I post on the Journal, use your instinct, if the mixture feels too dry, add a little more wet mix and vice versa.

While that is melting, mix in another bowl 250 gm desiccated coconut with 3 tablespoons Rice Malt Syrup and 1 tablespoon of honey and 1 tablespoon of melted coconut oil. Mix well and then push this mix down very firmly into a square/rectangular tray lined with baking paper. Pop this into the freezer for a short while and then remove.

While these coconut is in the freezer, heat water to a boil in a saucepan and pop a stainless steel bowl on top with a block of organic or fair trade dark chocolate in pieces to melt slowly.

Remove the coconut which should now be hard, but gently into bars and then drizzle with melted chocolate and store in the fridge or freezer for a quick healthy Bounty Bar whenever you like.
