Now these couldn’t be classified as ‘healthy’ per se as they still do have sugar in them, although it is coconut sugar, which is far better than a refined white sugar. They taste like sticky, caramelised little toffee style madeleines, and they’re divine!!
This recipe makes 12 big ones, I recommend doubling it, to make 24. The whole thing takes 25 minutes from beginning to end, which I love. Try use organic ingredients where you can.
INGREDIENTS
100gm coconut sugar
110 gm melted butter
1 tsp vanilla powder (I use Ovvio)
2 tbsp raw honey
2 large eggs
100gm self raising wholemeal flour
TO MAKE
Mix the 100 gm butter, honey, vanilla and sugar together with a fork. Add in the two beaten eggs, and then fold in the flour. Use the remaining butter to wash the madeleine tray inners, and then spoon in to the top of each madeleine section the mix. Place in an oven pre-heated to 180 degrees the tray, and bake for 10-14 minutes. Let cool in the tray for a few minutes then flip onto a rack to cool (although hard to resist eating warm!!).
