Nourishing Mushroom Broth With Brown Rice

There are days when I crave something soothing, nourishing and grounding. This is one of these dishes. It’s the perfect Autumn or Spring dish when the seasons are changing and there’s a gentle chill in the air. I always prepare more rice than I need so I can make this dish, Olive Oil Crispy Fried Egg on Rice in the morning for a healthy breakfast with some of the leftover ingredients…I’ll explain more below what to keep aside. I am such a huge fan of minimizing my time in the kitchen and thinking ahead to future meals so I can spend more time in the garden with my daughter. So as much as I can I try highlight the ease in which you can make multiple beautiful dishes.

Makes a bowl of nourishment each for 3 people.

Soak 2 cups of brown basmati rice (with another for tomorrow’s breakfast), or simply one cup of brown rice if you only wish to make this dish. Rinse after soaking and cook however you cook brown rice. There are a million ways to do this to be honest! Go with whatever is easiest for you. Reserve a cup of cooked rice for the dish Olive Oil Crispy Fried Egg on Rice.

In a saucepan sauté the smashed and roughly chopped cloves of half a head of garlic in a decent glug of olive oil until soft (don’t allow to go brown). Add a handful of dried shiitake mushrooms and stir for a minute then add a cup of vegetable stock. Simmer on a very low temp for 20 minutes. Check for the right saltiness, it will depend on your stock. Add sea salt if required.

Then in a fry pan add a bunch of broccolini that’s been sliced in half in lengths and all to blacken and burn a little. This will smoke, and add a little olive oil in towards the end. Remove and then add sliced oyster mushrooms (reserving half the packet for tomorrow’s breakfast) and allow to brown.

Drain the broth (reserve the shiitake mushrooms and garlic for the Olive Oil Crispy Fried Egg on Rice, and divide and pour over dishes of the cooked brown rice. Add to the bowl the vegetables, and sprinkle chilli flakes over the top.

NOTE; I also added in a teaspoon of Cordryceps, which is a full spectrum mushroom powder that enhances better health and supplies greater oxygenation of the body, increases immunity and mental power. Totally unnecessary but brilliant if you can find it. For this recipe I used SunPotion.
